Blueberry Crisp Recipe + The Bachelorette
A few weeks ago, I made one of Niequist's recipes called Blueberry Crisp. It is the most healthy yet sweet little dessert your mouth will ever taste. It's so healthy that you can even eat it for breakfast. And we have.
Ingredients
4 cups blueberries (or any fruit)
Crisp topping:
1 cup old fashioned oats
½ cup pecans
½ cup almond meal (available at Trader Joe’s, Whole Foods, health food stores, or made by putting almonds in food processor until fine, but before they turn to almond butter)
¼ cup maple syrup
¼ cup olive oil
½ tsp salt
Instructions
Pour four cups fruit into 8×8 pan. Spread crisp topping over the fruit. Bake at 350 degrees 35-40 minutes, or longer if topping and fruit are frozen, until fruit is bubbling and topping is crisp and golden.
Serves 4
In other news, The Bachelorette finale was the other night.We I have been avidly watching this season, with my husband dutifully by my side. Other than the month they were high-altitude training in Colorado, my beautiful sisters-in-law Erin and Deanna have joined us!
Brooks was the winner in this household. And he wasn't the winner on TV. In fact, Erin chose a brownie from Chris' plate, who Desiree ultimately chose. It turns out we all ended up cheering for him in the end - what a sweet guy!
To me, The Bachelor/Bachelorette isn't about who is chosen, whether or not they are "the one," or the drama that occurs. Rather, it's a chance to gather, eat, giggle, have fun, and build relationships with the people around me. And so for that reason, I would say this was a successful season!

So, with it being the finale and all, I had to decorate! After all, it's just a regular old event unless you make it a big deal. And so this happened to our kitchen table.
I am not ashamed that I spent 1+ hours working on this. After all, Erin and Dee were freshly home from a month long trip and this has to be the mostdramaticfinaleofbachelorseasonever. Sorry for my Chris Harrison moment. Plus, who doesn't love flourless chocolate brownies from Niequist's book? (Sorry but you'll have to buy the book for that recipe - trust me, it's worth it! And gluten-free).
